Green Minestrone with Herbs and Spring Vegetables

Ingredients
(Servings: 2)
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1/2 onion
- 1 celery stalk
- 30g green beans
- 1 bunch rape blossoms
- 1 cup dried white beans * or water-cooked white beans
- 2 cups vegetable or consomme soup
- Bouquet garni (thyme, oregano, celery leaves) - to taste
- 1/4 teaspoon salt
- Pepper - to taste
- Parmigiano-Reggiano cheese powder - to taste
Preparation
- Cut the onion into 1cm cubes and celery into 2cm cubes.
- Boil the white beans until tender.
- Bundle the herbs together with cooking twine to create a bouquet garni.
- Boil the green beans and rape blossoms in lightly salted water, then drain and cut them into 2cm pieces.
Instructions
1. Heat olive oil and minced garlic in the pot over medium heat, sauté garlic until fragrant. Add the diced onion and celery to the pot and sauté until the onions become transparent.
2. Pour in the broth, boiled white beans and the bouquet garni. Bring the mixture to a boil.
3. Season with salt and simmer uncovered over low heat for 10 minutes.
4. Remove the bouquet garni from the pot and add the boiled green beans and rape blossoms. Heat the mixture on a gentle simmer.
5. Season with salt to taste and serve.
6. Finish with a sprinkle of pepper and cheese powder.
